Oven Scrambled Eggs

24 eggs

1 Tbsp salt

2 cups milk

1 stick unsalted butter

Preheat oven to 350 degrees. Melt butter in a 13x9 baking pan in the oven. While that is melting beat eggs, salt and milk together. Pour into pan over the butter. Bake for 25-30 minutes, checking and stirring every 10 minutes. Eggs will continue to set up after they are removed from the oven.

Easy Peel “Boiled” Eggs

12 eggs

1 cups water

1/2 tsp. baking soda

Place 12 eggs on a wire rack in a pressure cooker. Mix water and baking soda and pour over eggs. Pressure cook on high for 5 minutes. Allow pressure to release naturally. Place eggs back into the carton and refrigerate until cold. Even fresh eggs will peel quickly and easily!

Carrie’s Deviled Eggs

12 hard boiled eggs

1 Tbsp. yellow mustard

1/3 cup mayonnaise

3-4 Tbsp juice from a dill pickle jar

1/4 tsp. black pepper

1 packet dry ranch dressing mix

Sprinkle of paprika

Cut eggs in half and remove yolks. Mix together egg yolks, mustard, mayonnaise, pickle juice, pepper and ranch mix. Spoon mixture into a plastic zip top bag and cut off one corner. Squeeze yolk mixture out of the bag into halved egg whites like a frosting piping bag. Sprinkle with paprika and serve chilled.
